Roasted sun-chokes are so Delicious! Scrub with a designated brush under water. Cut into chunks but don’t peel. Boil in salted water (covered) for 10 minutes – till just tender but not falling apart. Drain and toss with extra virgin olive oil and some minced garlic- salt and pepper (can add herbs now, if desired). Put on baking sheet that has been brushed with olive oil. (Can be done earlier in the day of serving).preheat oven to 400f. Roast sun-chokes in preheated oven until golden and crispy on the outside edges but still very soft inside-for 30-35 minutes
