Since I was little, creamy mashed potatoes have always made me feel safe and soothed. I think I ate a truck load while pregnant- Can you “feel” how soft, swooping and gorgeous the texture is just by the way the masher sinks, then almost begrudgingly emerges? Just heaven. Boiled peeled creamer potatoes, mashed with hot milk, butter, a good swig of sour cream and kosher salt and freshly ground black pepper. (A shot a cayenne never hurts…) Can add sautéed scallions-amazing-crisp bacon, shredded cheese- the list goes on…) To make these even better (more diverse, texturally) I spread this mixture in a buttered oven-proof dish (can sprinkle cheese on the buttered surface) and then, to make things look finished, I use a decorating comb on top-and then gently tidy the sides. This gets baked- 375f covered for 35-45 ( till piping hot)- then uncovered until top is golden and crisp
