Tonight’s dinner was really wonderful/ not just because it tasted great- but because our meal tonight utilized yesterday’s food in a way that just floored me. Last night, we had a meal that included sautéed spinach (with garlic and olive oil) and also sautéed corn (with onions). So, today, I took a rack of lamb out of the freezer- which would get slathered with garlic-oil, black pepper and herbs (which I roasted) and I took my leftover vegetables and made two fillings (corn and spinach) for ravioli which I served, on the side, in a sauce made from lamb stock, butter, cream and Parmesan.
