Baker's peel by New Star Foodservice
A large, smooth, wooden board with a handle is used to transfer free-form loaves, rolls, pizzas and even some pastries to and from a very hot baking stone, using a home oven or a pizza oven. If unavailable (and working in a home oven), a sturdy flat cookie sheet usually can be used as a substitute to transfer pizza into the oven Ð but be careful when lifting weighty assembled pizzas out of the oven, without a peel!
