Couche (large proofing cloth) by Saint Germain Bakery
This large bakers cloth is made of linen and, after being rubbed generously with flour, keeps baguette dough from sticking while having its final rise, before baking. Do not wash after using, just shake out excess flour (do this outsideÉ) and then fold up loosely and place in a drawer, enclosed in an unsealed plastic bag.
