Fermented black beans
Salty, cooked and then fermented and then dried (but not hardened) soybeans are a valuable ingredient in many Asian cuisines. They need to be soaked, drained well and chopped before adding (sauteeing with other aromatics like chopped scallions, ginger and garlic) to savory sauces.
